Ingredients:
baby red and white potatoes, leftover roasted from last night's dinner!
red pepper, chopped
grape tomatoes, sliced
fresh parsley, chopped
scallion, chopped
2 farm fresh eggs
salt and pepper
Directions:
Saute all the veggies for a few minutes in a little olive oil (heart health, people!). Add 2 eggs to the pan. Scramble it all up (not shown ;) )
YUM.
