Happy 2nd day of summer!
What a glorious few days it has been. Sunshine, practically no humidity and gentle breezes. I was so excited to sneak of taste of our first freshly picked green beans this week at the stand. Last night for dinner I made a quick and easy side dish I thought I'd share- snappy and garlicky with a touch of zest and crunch.. perfect for this weekend's bbqs!
Garlicky Green Beans with Almonds and Lemon
1.5 lb green beans, left whole with stem ends snapped off
5-6 (or more!) cloves garlic, sliced thinly
1 bunch garlic scapes, cut into green bean lengths
blanched almonds
fresh squeezed lemon juice
olive oil
salt and pepper
Saute the garlic scapes and green beans in a large wok on med-high heat. Stir often- you are looking for the beans to turn that gorgeous bright green color. When they have, make a space in the center of your green bean pile, drizzle a little more olive oil and add garlic. Saute 30 second (make sure they don't burn but can turn golden) and then quickly toss beans and garlic together. Turn off the heat. Squeeze fresh lemon juice, sprinkle almonds, season with salt and pepper. That's it! I garnish with fresh lemon slices for my friends if they'd like a little more lemon punch.
